I don’t get out to vegan restaurants often, but a recent visit to The Beet Box in northwest Oklahoma City made me want to explore this kind of food more. This plant-based spot serves comfort food that doesn’t feel like a compromise — it feels like its own, flavorful experience.
The Beet Box is 100 % vegan and makes everything from scratch, often partnering with local farmers for fresh ingredients. What really stands out about this place is the story behind it: it was started by two young entrepreneurs, Randon Moore and Gwyneth Yvonne, who blended culinary experience and business sense to create a menu that reimagines familiar favorites in plant-based form. Their journey began in a college apartment where they developed signature items like the Chick’less Patty and loaded fries, eventually taking those recipes to the streets as a food truck before landing this brick-and-mortar location.
What You’ll Find
Looking at the menu online, a few items clearly match what’s in these photos:



Bang Bang Tacos — crispy, panko-crusted heart of palm “shrimp” tacos topped with shredded lettuce, pico de gallo, sliced jalapeños, and bang bang sauce over a warm tortilla. Black
