The thing I always check first at AM Donuts & Coffee is not the glazed donuts, even though they do those right.
I look for the sausage and jalapeño rolls.
AM Donuts & Coffee sits at Northwest 29th Street and Pennsylvania Avenue in Oklahoma City, the kind of small morning stop where the counter case tells you most of what you need to know. Donuts lined up. Coffee ready. A few savory rolls waiting for people who need breakfast to act like lunch.

If someone asked me to pick my favorite donut shop in Oklahoma City, I would not have to think very long. It is this one.

I have been going to AM Donuts since college, really since not long after they opened. I asked the owners how long they had been in business, and they told me about 15 years. That tracks with how it feels. Some places do not need a big reinvention every few years. They just keep showing up early, making the same things well, and becoming part of people’s routes.
The roll that keeps me coming back
The donuts are fresh. The shop is clean. The owners are friendly in that steady, familiar way that makes a small business feel like a real neighborhood place instead of just a transaction.
But the sausage and jalapeño roll is the order I think about.
You can find sausage rolls, kolaches, and jalapeño versions all over Oklahoma City donut shops. A lot of them are fine. Some are basically a bun split open with a sausage tucked inside, which works in the same way a shortcut works. It gets you there, but you notice the difference.
AM Donuts does theirs the way I prefer. The dough wraps all the way around the sausage before it is baked. That sounds like a small thing until you eat one. The outside stays soft, the roll feels more put together, and the whole thing lands closer to homemade than assembled.
That is usually my move here, one sausage and jalapeño roll plus a donut from the case. A classic glazed is never a bad call, but this is also the kind of place where I end up looking at the old-fashioned donuts, twists, fritters, and whatever else is sitting there fresh behind the glass.

The early-morning work shows
I worked in a donut shop when I was in high school, so I have a soft spot for places like this.

A lot of people walk into a donut shop at 7 a.m. and see the easy part: coffee, pink boxes, kids pointing at sprinkles, someone grabbing a dozen for the office. What they do not see is that the day often starts around midnight, or two or three in the morning, depending on the shop and the workload.

That schedule is its own strange little world. While the rest of the city is asleep, somebody is mixing dough, frying, glazing, filling cases, brewing coffee, and trying to make sure the first customer of the morning does not get yesterday’s effort.

That is part of why I appreciate AM Donuts. The consistency is not accidental. Every time I have stopped in, the donuts taste fresh, the place looks cared for, and the husband-and-wife team behind it seems to be there making sure it stays that way.
I do not need every donut shop to be trendy. Sometimes the better test is whether you still want to go back after years of seeing the same counter.
AM Donuts passes that test for me.
Some of my favorite memories here are with Luke. When his school was nearby, we would stop at AM Donuts several mornings a week before class. We would grab breakfast, sit for a few minutes, and then get on with the day.
There is nothing dramatic about that, which is probably why I remember it so clearly. A small table. A donut. A sausage roll. A few quiet minutes before school. Parenting gives you a lot of big moments, but the little routines are the ones that sneak up on you later.
We live farther away now, so I do not get to AM Donuts as often as I used to. I still try to make it by about once a month. Partly for the food, but also because I like supporting places that have earned their regulars the old-fashioned way.
They show up. They make good breakfast. They treat people kindly.
For a donut shop on N Penn, that is more than enough.
